Fall has always been one of my favorite times of the year! The changing of leaves, the crisp morning air and the cozy sweater and scarf season.
I always try to take advantage of the food that is in season. When we buy food from the grocery store, it’s been picked, transported and then sat in a warehouse or on the shelf before it gets to our grocery bag. The longer produce sits on the shelves, the more nutrients and antioxidants they seem to lose. Another benefit of eating seasonally is it supports our local farmers who work so incredibly hard year round.
In the fall, one of my favorite seasonal foods is apples. The kid in me comes out every year when I get to go apple picking at a local farm. Usually, I come home and make my famous apple crisp but this year my apples went into some delicious applesauce that not only I could enjoy, but could be fed to my 9-month-old daughter.
Apples are one of my favorite fruits I like to incorporate in my daughter’s diet. It’s part of the stone fruit family which means its filled with natural prebiotics. Why do we as Mom’s love prebiotics? Because they help our babies have healthy poops and we all know when you become a Mom, you become obsessed with your babies pooh ( sad reality!!).
This recipe I added some beets for some added antioxidants and a lot of warming spices to aid in digestion and go with the change in cooler weather.
6 peeled, chopped apples
1/2 red beet peeled and chopped
1 teaspoon cinnamon
1/4 teaspoon ground clove
1/8 teaspoon ground nutmeg
1/8 ground ginger
1/2 cup water
Cook all ingredients (except water) over low to medium heat in a saucepan, covered for 30-45 minutes, stirring occasionally. Let cool and add water and apple mix to the blender to reach your desired consistency.
