TAKING OUT GLUTEN & DAIRY, ADDING IN GOOEY & DELICIOUS

by | Jan 20, 2019 | FAMILY RECIPES

The imperfect looking brownie which tastes absolutely perfect!

Baking gluten-free isn’t always an easy task. You get some hits and ALOT of misses! It’s not an easy task to get the ingredients just right. I can’t tell you how many times I have worked with trying to create a gluten-free recipe and end up something an end product hard as a rock. Sometimes it even goes the other way and things are way too moist, making it an absolute mess to eat and serve.

I couldn’t be happier with how this recipe turned out. I was so excited that I sent pictures and recipe copies to all my friends who are on g-free/dairy-free diets. I had to spread the word of these amazingly gooey and delicious brownies!

Dairy & Gluten-Free Brownies

  • 2 avocados
  • 1/3 cup real maple syrup
  • 1/2 cup coconut sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 1/2 cup raw cacao
  • 1/2 cup dairy-free chocolate chips
  • 1/2 cup Cassava Flour

Mix all ingredients together and bake in a greased baking dish for 30 minutes at 350 degrees.

Since we are on the brownie topic, I thought I would share one of my all-time favorite recipes. This one does contain gluten, but I’m sure the all-purpose flour can be substituted with a gluten-free option ( I just have never tried it). These do however contain no dairy! My friend Sarah shared this recipe with me when we both dealing with a colic baby and couldn’t have any dairy in our diets. Dealing with a colic baby isn’t easy and sometimes a chocolate fix is all you need! If I am not baking for someone with gluten sensitivity, this is my go-to recipe. I have never brought dairy back with my brownies, this recipe is just too good, there is no reason to ever go back 🙂

Dairy-Free Brownies – My All-Time Favorite Recipe

  • 3/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon coarse salt
  • 2/3 cup olive oil
  • 1/2 cup boiling water
  • 2 cups of sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/3 cup all-purpose flour
  • 1 cup semi-sweet dairy-free chocolate chips

Whisk together cocoa powder, baking soda, and salt. Add 1/3 cup olive oil ( half of the recipe amount) and boiling water into the cocoa powder mixture. Mix until smooth. Add in sugar, eggs, vanilla, and remaining olive oil. Mix until smooth. Fold in chocolate chips with a spatula until just mixed in. Pour the batter into a greased 9X12 pan and bake for 35-40minutes at 350 degrees. Let cool in the pan for 30 minutes before cutting.

Enjoy
